happy halloween

I managed to catch a rather nasty cold this week, so I'm home while everyone else it out trick or treating. I even had a costume ready for tonight...guess I'll have to wear it next year. Of course, cute kids are much more fun to see in costume anyway. So hear ya go.

Yesterday the kids got to dress up for school. Olivia and Isaac are both vampires and Grace is Alice in Wonderland.





Tonight Olivia is trick or treating with friends so I didn't get another picture of her. Here are the other three. Grace is a cat tonight.

opinions please

I've been mulling this over for awhile and wondering what you think.

Anyone interested in me doing mini photography sessions? I'm talking like 20 minutes and I'll edit 5-10 pics for $50-75. So you don't get the full 30-50+ photos to pick from, but you get a few good ones and call it a day.

Even if you don't live in the area, I'm interested in your opinion.

But wait there's more....

I've also had some inquiries about buying my fine art photos...(please excuse the explanation) as in non-portraits, things like flowers, landscapes, etc... so I'm also wondering, if you would be interested in me making my fine art photographs for sale in more official way. Thoughts?

On Monday, before October turned into winter, Asher I spent the afternoon with Avery and Danielle. The babes played and the mamas talked and talked and talked. Pregnancy. Parenting styles. Food. Health. Church callings. Fashion. It was just what I needed.

I'm so grateful for dear friends. I have been very blessed at all stages of my life with wonderful friends. Friends who inspire me and teach me and love me and make me laugh and share in my joys and sorrows. And the blessings just keep flowing. Since we've moved back here, I've made several new friends who I just love already. I'm a very lucky girl.

To all my friends out there, virtual and otherwise, thank you! You mean the world to me.

vacation pics



Way back in August, we went on a fun vacation with my family to Jackson Hole and Yellowstone. I finally got around to going through the photos and posting about it. It hasn't stopped snowing since this was taken either, so now there is even more snow!
On cold mornings there is nothing better than a hot breakfast and we've discovered a new one: steel cut oats! Its possible we are the last to find out about this MUCH better version of oatmeal, but its better late than never right?

I had heard mention here and there that steel cut oats were way better than rolled oats so when we picked up some bulk items at Blue Chip Group, we got some. This week we got them out and have been eating them every morning. We love them!!! The texture is so much better than rolled oatmeal. The only downside is that they do take longer to cook.

Asher really, really likes them. The first morning we made them he ate three bowls! This morning he was entranced by the big falling snowflakes and enjoyed his breakfast in front of the window.

15 months old (yesterday)


Our boy is 15 months old and each day he seems less a baby and more a little boy. He is walking but not full-time yet. Each day the ratio of walking to crawling leans more towards the walking, but he's not totally sure about it yet. He can crawl like lightening so when he wants to go fast that is his method of choice.



He loves coloring, eating with a fork, chocolate, helping us cook, putting things in containers, being outside, sharing food with Mommy, giving the most wonderful hugs, playing with his big brother and sisters and nursing of course. He still nurses quite a bit. And despite my attempts at teaching him the sign for "milk" to use when he wants to nurse, he usually just crawls on my lap and pulls on my shirt. Not very discreet I'm afraid. He's also extremely loud and vocal although he doesn't say real words very often.



Every day we seriously love him more. He is such a delightful little chap and makes our lives such a joy.

pumpkin apple soup


Last week my live in chef/husband, Jared, decided to make pumpkin apple soup. He found this recipe and then proceeded to do whatever he wanted per his usual cooking method. The fact that he glanced at a recipe at all is rather amazing. He is the king of making stuff up out of his head.

But back to the soup... he used vegetable bouillon instead of stock and then added ginger, cinnamon, and a bit of nutmeg to it also. He also added white beans after the rest of the soup was blended to add more texture and substance. Oh, and he left out the milk. It really didn't need it.

The soup was a hit! Everyone loved it, including Asher. We all had two big bowls each. It is both sweet and savory and really hits the spot this time of year.

Sunday evening after taking the missionaries home (we had fed them dinner), Jared burst through the door demanding we all take a stroll through the neighborhood. The weekend had been unseasonably warm and the fall colors were calling us. We rushed to put on our shoes and head out before the sun beat us.

The first delight to greet us was this beauty in our neighbor's yard. Don't you just love how roses last and last and keep on blooming? It makes me happy that the gorgeous blossoms keep coming back again and again from spring to fall.


Olivia, who was in the concluding chapters of her latest book, brought it along.




But the call of fallen leaves was too much to resist.



Asher got to enjoy playing in the leaves for the first time.



And as darkness fell forcing me to turn on my flash, we rounded the corner towards home, Asher perched atop Daddy's shoulders.


Fall is a glorious time of year.

eat to live


I've been wanting to write this post for awhile, but just haven't made the time. And since stupid ABC.com isn't letting me watch last night's episode of Grey's I figured I should finally get around to writing it.

Last month I read Eat to Live by Dr. Joel Furhman. This book can change your life. I do not exaggerate. It takes the science that is in The China Study and makes it practical. The book is marketed as a diet book, but even if you aren't looking to lose weight, you should still read it.

Dr. Furhman works with patients who are dying. People with heart disease and diabetes. People who are severely overweight. He presents a plan for people like that who need to lose a significant amount of weight to save their lives. But he also explains the whys and hows of food's effect on our body. He debunks diet myths. He gives recipes. He backs everything up with science. And he explains how we ALL can eat to PREVENT disease and prolong our lives.

The basic gist of his approach is that we should be eating a diet with a high density of nutrients. He says Health=nutrients/calories. So we should be getting the vast majority of our calories from whole vegetables and fruits, whole grains, beans and legumes because these are the most nutrient dense. Everything else should be minimized. For people who don't need to lose a lot of weight or who aren't already suffering with disease he says to think of it as 90% fruits, veggies, grains, beans and 10% can be refined stuff, sugar, animal products, oils. So you can eat whatever you want as long as you keep 90% the good stuff. (He is more stringent with people at immediate risk.) He says to have this in mind: "Salad is the main course!"

The other great thing is that there is no portion control when you are eating the good stuff. You can eat as much as want. We've been eating HUGE salads like the one pictured above. We've been eating tons of fruit. We eat really big portions. It is awesome! I never feel at all deprived.

Something Dr. Furhman said that I love and makes so much sense is that the reason we have a sweet tooth is so that we will eat fruit. Fruit has SO much good stuff in it. It is full of micro-nutrients and antioxidants that prevent cancer and other disease. We NEED fruit!

And here's a little secret.... when you begin to eat this way--when you stuff your face with yummy whole foods and realize how satisfying it is--you begin to lose your desire for the fatty, processed stuff. It's true. I've experienced it. One day I wanted a milkshake and got one and ended up not even really enjoying it. It was so sweet and rich. I ate it, but then I totally regretted it. And last week when I was visiting my parents, I had a couple heavy, greasy, meaty meals and felt totally sick afterward.

We all know that we should eat our vegetables, but I think that our desire to maintain our bad food habits and the crazy diet industry have combined to make everything seem SO complicated. I used to think I was a pretty healthy eater but I was still a bit overweight and unhappy about it. I wasn't obsessed or anything, but I thought the only way for me to lose weight would be to exercise a ton. The truth is, although exercise is very important, by eating the right foods, my body shed the weight even without exercising an hour a day. And I never had to think about it. I didn't start eating healthier to lose weight. I did it because I wanted to BE healthier and prevent disease.

And it really is so simple. Just aim for that 90/10 ratio of good to bad. I still eat treats and once in while I eat meat or dairy. But I have begun to want them less and less because I realize how good I feel when I don't eat them.

For many people, shifting to eat this way is going to be really challenging because it goes against what they've done their entire life. But if you want to prevent disease, if you want to cure disease, if you want to feel better or lose weight, go read this book. There is SO much information in Eat to Live--I've barely scratched the surface. But I hope its piqued your interest. Have an open mind and just read it. It is SO motivating. And it gives you the tools to get started.

Forgive me for getting on my high horse and being so evangelical about it, but I really want everyone I know to realize how simple eating well really is. And that it can literally save your life. Knowledge is power, people. Knowledge is power. :-)

Dr. Furhman also wrote a book about feeding kids called Disease Proof Your Child. It is also excellent.

an american in finland

From the ages of 4-9, I lived in Cleveland where my dad was doing his surgery residency. There were several other young LDS families there for the very same reason. One of those families had a daughter a year or two younger than myself who now lives in Finland with her husband. (still with me?) Missy and I reconnected last year sometime thanks to the wonder that is blogging. I've loved reading about their experience living in a foreign country. Missy recently gave birth to their first baby and yesterday she posted about her experience there with Finland's socialized health system. I found it fascinating. Take a look.

home again

Friday night Asher and I came back home to Salt Lake City to a Daddy/Husband that missed us dearly. Our flight was delayed which meant a prolonged stay in the Albuquerque airport. That was actually harder than the flight itself because Asher wanted to crawl everywhere in the airport, but I could keep him contained on the flight. I even had an empty seat next to me which was wonderful.

Unfortunately, upon arriving home I was informed that Olivia has head lice. Not fun. I spent two hours Friday night picking nits and bugs out of her hair. Her mom did the same on Saturday night and I did it again this morning. Luckily at this point it doesn't appear to have spread to the other kids or us. Please keep your fingers crossed for us that we've got it contained. I had a horrible case of lice when I was 12 or 13--I had poison ivy at the same time so the itching didn't clue us in to the lice until it had gotten quite bad. SO SO SO gross. This brought back all those memories. Shudder.

Anyway, our trip was really nice. It is always nice to be with family and to not have to cook or clean for a week. Asher had fun hanging out with Uncle Nick and Grandma and Grandpa and chasing the dogs around. It is nice to be home though.

We went shopping down in Santa Fe today. Managed to get Asher some darling clothes items. He's pretty much all set for winter now thanks to Grandma Dawn. We also had a good time just browsing shops in the old part of town.
