hiking battle creek falls



Last Friday, we took Kalli up on her invite to hike Battle Creek Falls. Jared and all 4 kids came along and we had a great time. Thanks for getting us out, Kalli! My apologies for only getting a picture of everyone's backsides.

Jared even took the camera and got a couple pics of me and the Ash Man looking cool in his shades.



I really like this picture. I love having Asher all cozy in the carrier.

We are hard core and hiked up a ways farther than everyone else. The kids loved playing in all the rock. Actually, Isaac and Olivia kept going so Jared had to go after them and then I had to find them too. It was fun though.

13 months old (and 5 days)



monday at the art exhibit



Monday evening the kids came over for a few hours and we decided to head downtown for Family Home Evening to see the art exhibit at the Conference Center. Each year the Church has an international art competition and many of the submissions are display right now. This year the theme was "Remembering the great things of God". Click here to learn more. I really enjoyed the exhibit and the kids actually had a lot of fun too. Where there are fountains, they are happy!


I've never put a slideshow on here because I like to see all photos in the post usually, but I have a lot and don't want to do them all separately. So please enjoy the slideshow of our outing, including some of my favorites from the art exhibit.

sunday

Regular LDS church meetings in Utah were canceled this week so that everyone could go to the new Oquirrh Mountain Temple Dedication. Some new friends in our ward have a little boy Asher's age and they asked if we would trade babysitting that day. So we watched Aaron in the morning while they went to one session, and they watched Asher in the afternoon while we went to another. It worked out great! When we went to pick up Asher he wasn't even excited to see us. They said he never cried or anything. And this was the first time he had ever been left with non-family members!

how it's gonna be

School starts tomorrow and with the new school year comes a new schedule with the kids. We sat down last week with their mom and figured out how to split the time. People often ask me how it works, so I thought I'd explain how we are doing things.

Over the summer, the kids spent one week here, and then one week at their mom's. We usually traded on Saturday or Sunday morning. (We both had afternoon church for awhile. We recently switched to 9 am. Yay!) The kids also usually spent one weeknight at the other parent's house for dinner so they weren't going a whole week without seeing the other parent. And we often had one or more of the kids for a few hours here or there when their mom needed us to. This schedule worked great for the summer. I imagine we'll probably do it like this again next summer.

School changes everything though. Jared and I both have extremely flexible schedules. He is working entirely from home this semester, and I am home unless doing a shoot, which are usually in the evenings or on the weekend. The kids' mom is starting a graduate program and has class 3 days a week so we came up with a plan that will hopefully work well.

Mondays and Tuesdays they are with their mom... always.
Wednesdays and Thursdays they are with us... always.
Friday through Sunday they alternate every other week.

So it works out that they spend 2-5-2-2-5-2 going back and forth. It keeps the schedules for each week day's activities with the same parent. I am optimistic that this schedule will work well. We got the idea from a mediator we met with a couple years ago. It's a good way to do things for parents that live close to each other and have school age children.

I have to say that I think things are going really well over all with the kids. Being a parent (and a step-parent) is never easy but between you and me, it is really nice to get a break every few days. It makes this whole step-parenting thing WAY less overwhelming for me. I think we've all adjusted to our move here very well. School is going to add some more craziness to the mix. But it also means that I always have my days free.

I also must add that Asher simply adores his big sisters and brother. He loves playing with them and is often upset when they leave. They love him too, even though he sometimes messes up their playing. I'm grateful Asher has so many people to watch over him and love him.

end of summer

I have not been in much a blogging mood lately which is a shame because I have a month's worth of things to blog about. This equals hundreds of photos to sort and edit and I just haven't been up to the task. I'll get around to it eventually. My first priority is to finish a family shoot from a couple weeks ago.

School starts in less than two weeks, so this is the last week we have the kids before they go back to school. I'm hoping we'll get a few fun things in, like swimming and hiking. Monday we all rode our bikes to the library branch in our neighborhood for family home evening. My sister Hilary is storing her cruiser here and so I rode that with Asher on my back in the Beco. Um, I don't think that bike is meant to go on any sort of hill. The ride to the library is slightly uphill the entire way and it was HARD. Granted, I am out of shape, but I was not expecting it to be that hard. Fortunately, I pretty much coasted the entire way home which was very fun. Next time I bike to the library, I'm going to ride my bike.

I got two novels at the library and proceeded to read them both in less than 24 hours. You know when you are just in the mood for some easy reading? That was me. I got two Nicholas Sparks books. Fun, romantic, cheesy goodness.

Today, I've been helping Olivia do her math homework. She has a packet of worksheets she has to do before school starts. This year she will be attending a different school and doing an accelerated learning program. Right now she's throwing a mini-tantrum because she doesn't want to write down all her work and so she keeps getting the answer wrong. (Long division)

And Grace is in timeout because she bit Isaac.

Isn't parenting, fun?

I think this afternoon we'll make cookies and take some to the neighbors.

Now, it's off to make lunch!

The trains are SO cool! I couldn't believe how big some of them are.
If you have kids, or even if you don't, it's worth going to see the trains. You can even climb on and go inside some of them.

what about protein?

I'm still feeling too lazy to go through the many, many photos I have of our happenings lately, so instead I'll talk more about food.

I'm reading Eat to Live by Dr. Joel Furhman. It's actually a "Diet" book and although I'm not interested in trying to lose weight, it does have really good information and basically prescribes a mostly vegan diet. I just wanted to share one tidbit.

One of the biggest questions people usually have for vegetarians/vegans is "Where do you get your protein?" I wondered the same thing back in the day. Most of us equate protein with meat or dairy. But did you know that per calorie broccoli, kale, and romaine lettuce (!) actually have about twice or more the amount of protein as sirloin steak? Granted you have to eat a lot more greens than steak to get the same calories. But I say... more food! yay! Plus, greens don't have fat or cholesterol and DO have lots of fiber plus TONS of other things that are super good for you too.

I love this paragraph from Dr. Furhman's book:

"The biggest animals-- elephants, gorillas, rhinoceroses, hippopotamuses, and giraffes-- all eat predominately green vegetation. How did they get the protein to get so big? Obviously, greens pack a powerful protein punch. In fact, all protein on the planet was formed from the effect of sunlight on green plants. The cow didn't eat another cow to form the protein in its muscles, which we call steak. The protein wasn't formed in thin air--the cow ate grass."

Protein is just one thing that our bodies need, but it's often the thing that concerns people most about not eating animal products. Well there is no need to worry. All plants, grains, nuts, and legumes have protein. If you are eating a variety of whole foods, chances are you are getting enough protein.

update on our "vegan" adventure

I've been needing to write this post for weeks. I have TONS of updates to write about recent happenings, but I thought I'd get this one posted now since it doesn't require going through all my photos. Plus, I've had some questions about it recently.

Ok, that was a super boring intro. Please read this post and this post to find out why we are cutting out most animal products.

Our quest to eat a more plant-based diet has been going pretty well. Here is the run down of what we've been doing and not doing...

1. NO buying milk, cheese, eggs, yogurt, etc.
2. NO buying meat (this was not a change for us)
3. DO get salmon occasionally. We've had it on average about every 2 weeks.
4. DO still buy butter. We don't eat it a lot and I think margarine is weird.
5. DO occasionally buy ice cream products. We have Creamies (ice cream popsicles) right now.
6. DO occasionally eat dairy products when eating out or at someone else's house. (We have bought pizza with cheese a few times)

So what do we eat? I actually don't feel like our menus have changed all that much. We now put rice milk on our cereal. We use soy milk for cooking. I've been using ground flax as an egg substitute in baking. You mix 1 tbsp ground flax with 3 tbsp water to equal one egg. I've used this substitute to make waffles, pancakes, cookies, brownies, cake, and even french toast!


This french toast was made with flax "eggs", soy milk, cinnamon, and a bit of nutmeg. The only thing I had to do differently is I had scrape some of the dip mixture off the bread because the flax is stickier than normal eggs. You also need to make sure your pan is well oiled for the same reason. Most people would not be able to tell the difference in taste... it is just a bit more nutty tasting.

I used to drink a lot of milk and eat a lot of cheese. I thought I would really miss these more than I actually have. The thing I miss most is probably cheese on mexican style food. We have found that avocado makes cheeseless bean quesodillas and burritos delicious.

Another fun and easy lunch is to make hummus sandwiches. We like to add tomato, avocado, and greens to ours.

The biggest challenge has been the kids. They definitely prefer cow's milk on their cereal. And they do miss yogurt. But overall, they've been pretty good about our changes. They still get milk and cheese at their mom's house which makes it more difficult for us. But we feel strongly that this is the right thing to do.

We eat a lot of beans. We have tofu a couple times a week. We have also integrated quinoa quite a bit into our diet. It can be used in place of rice and is packed full of protein. And of course, we eat lots of fruit and veggies.

The two cookbooks I mentioned in another post are very useful--Vegan Planet and How It All Vegan. A friend of mine also told me about the blog Whole Foods Vegan Momma which has lots of great info. I particularly found her posts on breastfeeding/pregnancy useful. See here and here.

This has been a process and it's not an instant change for us. There are still things I'd like to limit more in our diet--sugar for example. I also want to get the amount of white flour and pasta down to almost nothing. We do love our pasta around here. I'm going to start buying only whole wheat pasta.

So I would not say we are extreme by any means, but we have made some pretty big changes. As I said, it has not been as difficult as I thought it would be. The more I read and educate myself about this, the better I feel about our decision to limit animal products. The best way to eat really is WHOLE plant foods. Also, another great benefit of this way of eating is that you get to eat MORE! Seriously. And I've even lost a few pounds which I won't complain about one bit.

Barker Family Vacation 2009



We spent a week in Jackson, Wyoming with a day spent in Yellowstone. I love family vacations. I love the gorgeous mountains. I love my family most of all.

The only downside to this trip was the crazy stomach bug we all got. I started it all the day before we left--12 hours of violent vomiting and then its done. It was horrible but at least short lived. Unfortunately, I had to do quite a bit of cleaning up after sick kids the night Jared was also sick. Amazingly, Asher never got it. I say it was breast milk immunity.

Now back to the pleasant stuff. I give you highlights of the trip.

One of the days we went white water rafting which was tons of fun but we couldn't bring cameras so there are no pictures. My dad stayed behind with Asher and took him for a ride up the tram. He took this at the top.
